1 pound zucchini noodles (spiralized)

1 pound medium shrimp (peeled)

2 tsp lemon zest

2 tbsp fresh parsley leaves (chopped)

4 cloves garlic (minced)

1 shallot (minced)

4 tbsp butter (unsalted)

salt and pepper to taste


Instructions

  1. In a large skillet over medium heat, melt 2 tablespoons of butter and add minced 2 cloves of garlic.
  2. Stir in zucchini noodles for about 3 minutes or until tender. Season with salt and pepper. Set aside but make sure to keep it warm.
  3. Melt the remaining 2 tablespoons of butter in the skillet and cook the other half of minced garlic as well as the shallot.
  4. Add shrimp and season with salt and pepper.
  5. Stir occasionally until cooked and then add chopped parsley and lemon zest.

Serve immediately.
