Description
Crispy bacon and sauteed sweet onions are all you need to make an omelet that melts in your mouth.
Ingredients
4 strips bacon
3 large eggs
1/2 sweet onion (diced)
1 tbsp. butter
1/4 tsp. salt
1/4 tsp. ground pepper
Instructions
- Cook bacon strips in a non-stick skillet until crisp. Dab with a paper towel to remove extra grease, then break into small pieces.
- Combines eggs with salt and pepper in a bowl. Beat lightly.
- Melt butter in the skillet and sautee onions.Pour eggs into the skillet and wait until it sets. Sprinkle bacon pieces onto the omelet. Using a spatula, fold in half. Serve immediately.
Notes
Instead of frying the bacon strips, you can bake them. You can also sprinkle some chopped cilantro, parsley, or chives on your omelet.
