1 lb. chicken thighs (boneless, skinless)

1 tsp. dried oregano

1 tsp. garlic powder

1/2 tsp. chili powder

1/2 tsp. ground cumin

1/2 tsp. smoked paprika

1/2 tsp. ground pepper

1 tbsp. olive oil

juice of 2 limes

12 mini corn tortillas

1/3 cup sweet onion (finely chopped)

avocado (diced)

tomatoes (diced)

cucumber (diced)


Instructions

  1. Heat olive oil in a large skillet and cook batches of chicken until golden brown. Let the meat cool down before cutting into bite-size pieces.
  2. Serve chicken in corn tortillas and top with sweet onions, tomatoes, as well as dices of avocado and cucumber.

Notes
