Ingredients
Dough:
1/2 c. each softened butter and brown sugar
1 c. all-purpose flour
Filling:
1 c. each dates and nuts (chopped)
1/2 c. each butter and white sugar
2 c. rice cereal
1 tsp. vanilla extract
1 large egg (well-beaten)
Frosting:
2 c. powdered sugar
1/2 tsp. vanilla extract
3 oz. cream cheese
Instructions
Dough:
- Mix all the ingredients until crumbly and then press into the bottom of an un-greased 11X7-inch pan. Bake at 375 degrees Fahrenheit for about 10 minutes or until golden brown.
Filling:
- Combine the sugar, butter, and dates in a heavy saucepan. Bring to a boil and reduce heat. Mix about 1/2 cup of the mixture with egg then add back to the pan. Bring to a boil again and remove from heat. Add vanilla, cereal, and nuts, and then spread over crust.
Frosting:
- Combine all the ingredients in a small bowl and beat until creamy.
- Frost the bars and cut.
Notes
If you are unable to consume all the bars in one day, you can store them in the refrigerator.
