Ingredients

Dough:

1/2 c. each softened butter and brown sugar

1 c. all-purpose flour

Filling:

1 c. each dates and nuts (chopped)

1/2 c. each butter and white sugar

2 c. rice cereal

1 tsp. vanilla extract

1 large egg (well-beaten)

Frosting:

2 c. powdered sugar

1/2 tsp. vanilla extract

3 oz. cream cheese


Instructions

Dough:

  1. Mix all the ingredients until crumbly and then press into the bottom of an un-greased 11X7-inch pan. Bake at 375 degrees Fahrenheit for about 10 minutes or until golden brown.

Filling:

  1. Combine the sugar, butter, and dates in a heavy saucepan. Bring to a boil and reduce heat. Mix about 1/2 cup of the mixture with egg then add back to the pan. Bring to a boil again and remove from heat. Add vanilla, cereal, and nuts, and then spread over crust.

Frosting:

  1. Combine all the ingredients in a small bowl and beat until creamy.
  2. Frost the bars and cut.

Notes

If you are unable to consume all the bars in one day, you can store them in the refrigerator.
