Coconut Water Granita With Berries

Having sweet and decadent for dessert doesn’t necessarily mean that you have to turn your oven on all the time. There are so many treats out there that you can make that do not involve cooking nor baking. You only have to mix a few ingredients, and you can have an excellent dessert to satisfy your sweet tooth. And that’s exactly what Coconut Water Granita With Berries can do. It is sweet and very refreshing, making it a perfect dessert be it during the summertime or any season of the year.

But first, what is a “granita”?

Granita is a very simple dessert. It’s actually a semi-frozen dessert made with sugar and flavorings. Sounds like sorbet? It is quite similar to sorbet. The only difference is that sorbet has a much smoother texture while granita is coarser, more like shaved ice – fluffy and crunchy.

This type of dessert originated in Sicily and afterward became quite popular all over Italy and the rest of the world. The texture, though, varies from places to places, mainly because of different freezing techniques.

While granita can be coarse or a little bit smooth, it is still different from ice cream or sorbet. And that what makes this treat distinct and unique.

Description

Granita is an Italian delight that would surely cool you off faster than you could imagine on a warm summer day. This recipe though is quite unique because it is flavored with coconut water, not to mention the berry toppings.


Ingredients

Scale

4 cups of coconut water

1/4 cup fine sugar

strawberries, raspberries, or toasted unsweetened coconut flakes for garnish


Instructions

  1. Combine coconut water and sugar in a baking dish (2-quart) and stir until the sugar is fully dissolved.
  2. Freeze until solid, at least 4 hours.
  3. Scrape surface to create ice crystals. You can use a fork for this step.
  4. Put in a glass and garnish with your choice of toppings.

Notes

It is highly recommended that you use fresh or raw coconut water.

  • Prep Time: 10 minutes + 4 hours (freezing time)

Granita can be left in the freezer for up to a month. If you intend to freeze it for more than a day, it is important that you cover it. Also, this flavor of granita will mimic the color of coconut water, which is usually clear. Granita can be flavored with many things – fruits like lemon, mulberry, strawberry, chocolate, pistachio, almonds, and even coffee. You have a lot more options!
