Granita is an Italian delight that would surely cool you off faster than you could imagine on a warm summer day. This recipe though is quite unique because it is flavored with coconut water, not to mention the berry toppings.
4 cups of coconut water
1/4 cup fine sugar
strawberries, raspberries, or toasted unsweetened coconut flakes for garnish
- Combine coconut water and sugar in a baking dish (2-quart) and stir until the sugar is fully dissolved.
- Freeze until solid, at least 4 hours.
- Scrape surface to create ice crystals. You can use a fork for this step.
- Put in a glass and garnish with your choice of toppings.
It is highly recommended that you use fresh or raw coconut water.
