Juicy Mexican Chicken Fajitas
Another classic Mexican recipe, perfect for a weeknight meal…..
In just 20 to 30 minutes, from start to finish, you can enjoy juicy Mexican Chicken Fajitas. Imagine the flavor of seasoned chicken, seared and cooked to perfection with bell peppers, onions, and fresh lime juice, wrapped with tortillas. Uhmmm…dinner can’t get any better than that!
Is it healthy? Of course, it is! Looking at the filling, lean chicken, and fresh peppers, you can tell how healthy this recipe is. Plus, you can always add a dash of olive oil, low-fat cheese, and Greek yogurt if you don’t have sour cream handy. You’d get all the nutrients that you need from simple yet yummy Chicken Fajitas.
Seasoning
Fajita seasoning packets are available in the stores, but you can easily make your own at home, too. And besides, mixing your own spices will spare you from the sodium and additives that the store-bought fajita seasoning has.
You can add a little bit of olive oil and lime juice to make the marinade much better. You can season the chicken while you prepare the other ingredients. This way, the meat will have more time to absorb the marinade, making it juicier.

- Let the chicken cool for a little bit and slice into strips.
- Put the bell peppers, onions, and chicken strips into the skillet and cook until the vegetables are soft.
- Serve with tortillas.
Notes
If you wish your Chicken Fajitas to be spicy, you can add some chili powder, cayenne, or paprika.
Note that the prep and cook time do not include marinate time.

Wasn’t that a breeze? 🙂
When you are cooking the chicken, make sure not to overcrowd the skillet. Otherwise, it would be hard to cook them. If you need to work in batches, do so to ensure a good outcome.
Serving these to kids? They definitely don’t want their Fajitas spicy, so do not add chili powder. Also, it is highly recommended that you soak the onion in cold water to somehow make the taste milder.
Toppings
Chicken Fajitas can go with various toppings. If you are a veggie person, you might want to add some lettuce, olives, cabbage, and tomato slices. Bits of avocado would be excellent too.
So there you go with another incredible Mexican recipe that’s best for dinner. If you have leftovers, you can reheat them the following day for breakfast and lunch.
