2 ripe mangoes (peeled and diced)
1 avocado (peeled and diced)
1 cup chickpeas (cooked)
juice of a large lemon
1 tbsp. olive oil
1 red chili (dry, finely chopped)
salt and pepper
Instructions
- Make the dressing by combining lime juice, olive oil, and red chili in a small bowl. Add salt and pepper to taste. Set aside.
- In a large bowl, mix the diced mangoes and avocados with the cooked chickpeas.
- Drizzle the dressing over the salad and gently mix before serving.
Notes
If you want, you can add red Romaine lettuce or cilantro and red onion to achieve a richer taste.
