Ingredients

4 medium potatoes (peeled)
1 medium onion
1 large egg (beaten)
vegetable oil
salt and pepper to taste
Instructions
- Coarsely grate the peeled potatoes as well as the onion.
- Put the grated potatoes and onion into a clean tea towel. Squeeze the towel to remove the excess liquid.
- Transfer the squeezed potatoes and onion into a large bowl and add the beaten egg. Mix well and add a pinch of salt and pepper.
- Heat oil in a frying pan. Once hot, add spoonfuls of the potato mixture. Flatten them out into patties.
- Flip over and make sure that both sides turn brown and crispy.
- Serve.
Notes
You can flatten the ‘patties’ into half-inch thick. Each side should be cooked in about 3 minutes. Make sure that the oil is hot enough but not smoking.
