Vegan Lamington Bliss Balls

Description

Being a vegan doesn’t mean that you can no longer satisfy your sweet tooth. With a little tweak to the classic Lamington, you’d have delightful Vegan Lamington Bliss Balls in just a few minutes!


Ingredients

Scale

Bliss Balls:

1 c. raw cashews
1/3 c. desiccated coconut
1/4 c. maple syrup or rice malt syrup
1/2 c. whole raspberries
2 tbsp. coconut oil

Chocolate:

1/3 c. cacao butter (chopped)
1/3 c. cocoa powder
1/4 c. maple syrup or rice malt syrup
2 tbsps. each coconut oil and canned coconut cream

Coating:

1/2 c. desiccated coconut


Instructions

Bliss Balls:

  1. Put the cashews and coconut in a food processor. Process until it forms coarse crumbs.
  2. Add the syrup and coconut oil.
  3. Wrap each raspberry in about 2 tbsp. of the mixture. Once all the done, arrange the balls on a tray and put them in the freezer.

Chocolate:

  1. Melt all ingredients in a double-boiler over low heat. That is if you are making your own chocolate.

Coating:

  1. Once the balls are firm enough, remove from the freezer and dip each one into the chocolate before tossing in coconut.
  2. Freeze the balls for about 10 minutes or until the chocolate coating is set.

Notes

You can use either fresh or frozen raspberries.
