Description

Easy to prepare and easy to make…This Salmon Potato Casserole is a comfort food dish. It is flavorful and healthy, which is exactly what you need after a long day.


Ingredients

1 can salmon about 16 oz. (drained and flaked)

4 c. sliced potatoes

1 c. milk

3 tbsp. each butter and all-purpose flour

1/2 c. each mayonnaise and grated Parmesan cheese

1 tsp. each Worcestershire sauce and mustard


Instructions

  1. Fill a large pot with salted water and add potatoes. Bring to a boil. Once it starts boiling, reduce heat to medium-low and simmer for about 10 to 15 minutes or until tender. Drain.
  2. Get 1 cup of the reserved liquid from salmon and combine with milk in a bowl.
  3. Grease a casserole dish and preheat oven to 375 degrees Fahrenheit.
  4. In a saucepan over medium-low heat, melt butter and then stir in flour. Cook for about a minute or until flour is fully dissolved.
  5. Slowly add the milk mixture and cook for 5 to 10 minutes until sauce is thick and smooth. Stir constantly.
  6. Layer potatoes, salmon, and sauce into the dish.
  7. Combine mayonnaise, cheese, mustard, and Worcestershire sauce in a bowl and pour over casserole.
  8. Bake for about 30 minutes or until casserole is bubbling.

Notes

When draining the salmon, be sure to reserve the liquid.
