Description

Ingredients

Scale

1/2 c. cocoa powder (unsweetened)

2 1/2 c. flour

1 tsp. baking powder

1 tsp. salt

1 c. butter (softened)

1/2 c. milk

2 c. sugar

4 large eggs

1 c. sour cream

2 tsp. pure vanilla extract

1 oz. red food color

For the frosting (vanilla cream cheese frosting):

8 oz. cream cheese (softened)

1/4 c. butter

2 tbsp. sour cream

2 tsp. vanilla extract

16 oz. confectioner’s sugar


Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a medium bowl, combine cocoa powder, flour, salt, and baking soda.
  3. Get a large bowl and beat softened butter and sugar using an electric mixer on medium speed until the mixture gets light and fluffy.
  4. Beat eggs one at a time and add sour cream, food color, vanilla, and milk.
  5. Slowly beat in flour mixture at low speed.
  6. Spoon batter into a paper-lined muffin cup. Fill it 2/3 full. Make 30.
  7. Bake the muffins for about 20 minutes and cool on a wire rack for about 5 to 10 minutes.
  8. Remove from pans and allow to cool completely.
  9. Top each piece with Vanilla Cream Cheese Frosting.

Notes

It is very important that you do not overbeat the flour mixture.
