6 chicken breast halves (boneless, skinless, and cut into strips)
2 large onions (diced)
1/4 cup olive oil
1/3 cup curry powder
Instructions
- In a large skillet over medium heat, heat oil. Add the onions and cook until tender and brown.
- Stir in curry powder. Blend the ingredients well.
- Add chicken and simmer until thoroughly cooked. Make sure to cover the skillet. This may take about 40 to 50 minutes.
- Remove the cover and cook for an additional 10 to 15 minutes.
- Serve.
Notes
You can add more curry powder if you want the taste to be richer. When simmering, make sure to stir occasionally to avoid burning. Curry powder tends to burn easily. You can add a little bit of water, too.
