What is it? It’s actually a French word, which means “under vacuum”. Simply put, sous vide is low-temperature slow cooking – a method of cooking wherein the food is placed in a plastic pouch or airtight container and cooked in a water bath longer than it would take when done on a stove.

What Are the Benefits?

One of the biggest benefits of sous vide cooking is it helps prevent overcooking the eggs. It also preserves the natural color, aroma, and taste of the food. With this in mind, you can expect tastier and more flavorful eggs.

Just like when using a slow cooker, sous vide cooking also enhances, or at least preserve the nutritional value of the food. We all know how healthy eggs are, They are known as excellent sources of protein. And when they are hard-boiled via sous vide cooking, none of the nutrients are lost. This allows you to absorb all the proteins, healthy fats, and other nutrients that they contain once you eat them.

How to Use the Machine

If you haven’t used this type of appliance yet, here are things that you should remember:

  1. Prepare the Equipment

Attach the device to a large container filled with hot water from the sink. You can also use tap water, but take note that this will take longer to heat, so you might as well utilize hot water.

               2. Cover the Container

You have the option to cover the container with aluminum foil or dish towel to make it easier for the water to boil. Be sure, though, to leave the corner away from the circulator open so the steam can get out.

              3. Bring a Large Pot of Water to Boil

The amount of time for the temperature to reach 165 degrees Fahrenheit may vary, so it is highly recommend that you wait until it reaches 150 degrees Fahrenheit before you bring the pot of water to a boil.

 

                4. Add the Eggs

Once the water starts boiling, carefully add the eggs to the pot and boil for 3 minutes.

                    5. Prepare an Ice Bath

Meanwhile, fill a large bowl with ice water. Once 3 minutes is over, move the eggs to the ice bath.

                  6. Wait for 1 Minute

Let the eggs cool in the ice bath for about a minute and set them aside while waiting for the temperature to reach 165 degrees Fahrenheit.

               7. Transfer the Eggs to the 160 Degrees Fahrenheit Water

You will notice that the temperature will go down a little bit after adding the eggs, but it should go back up shortly.

              8. Leave the Eggs for 60 Minutes

Set your timer and leave the eggs for 60 minutes. Add tap water to the ice water bowl when the 60 minutes is almost up.

             9. Transfer the Eggs to the Cold Water Bath

Once the 60 minutes is over, transfer the eggs back to the cold water bath.

 

            10. Put the Eggs into a Storage Container

Allow the eggs to cool a little bit for up to 2 minutes before putting them into a storage container.

You have the option to skip the pre-boiling step. But if you want the eggs to easily peel off, this step would definitely help.
