A sumptuous dinner meal doesn’t have to be complicated. This roast lamb recipe only requires a few ingredients like rosemary, garlic, and olive oil, but the result is truly wonderful!

2 pounds lamb shoulder (boneless)
1 teaspoon freshly chopped rosemary
2 teaspoons fresh thyme leaves
4 cloves garlic (minced)
3 tablespoons extra-virgin olive oil
salt and pepper
Instructions
- Preheat oven to 450 degrees Fahrenheit.
- Combine garlic, rosemary, thyme, and 1 tablespoon of olive oil in a small bowl. Season with salt and pepper. Use the mixture to rub the lamb shoulder with.
- Put the lamb on a baking dish and roast for about an hour.
- Once roasted, let it cool off for 15 minutes, remove twine, slice, and serve.
Notes
The lamb shoulder should be tied with butcher’s twine before cooking.
