So what’s with this recipe?

Well, as the name suggests, it is made with cream cheese. This smooth cheese is popular with bagels, crackers, as well as bread. But it can be an excellent ingredient for pasta as well.

In a nutshell, cream cheese is made by combining cream and milk. That is why it has a smooth consistency and mild taste. So imagine that mixed with spaghetti pasta seasoned with garlic, salt, and pepper. Not to mention the Parmesan cheese that makes it creamier. Sounds really good, right?

Description

Cream cheese is what makes this pasta recipe indulgent. Combined with garlic, salt, pepper, and chili flakes, you’d have a sumptuous lunch meal.


Ingredients

Scale

225 grams of spaghetti pasta

160 grams of cream cheese

30 grams of grated Parmesan cheese (add more for serving)

1 tablespoon olive oil (add more for serving)

1 garlic clove (minced)

120 ml of cooking water

1/2 teaspoon chili flakes

salt and pepper to taste


Instructions

  1. Cook pasta until al dente in a large pot of boiling water.
  2. Reserve a cup of the starchy water before draining.
  3. While cooking the pasta, heat olive oil in a large skillet and add the garlic. Make sure not to get it burnt.
  4. Add the cream cheese, pasta water, and Parmesan cheese. Mix well with the oil until the sauce gets creamy.
  5. Add the drained pasta to the skillet. Mix well and ensure that each piece gets coated with the sauce.
  6. Drizzle olive oil, Parmesan cheese, pepper, and chili flakes.
  7. Serve immediately.

Notes

When you cook the garlic, you can also add chili flakes.

Other Tips

There are several types of cream cheese out there, but I highly recommend Philadelphia cream cheese. Take note also that the pasta water already contains salt, so it is advisable that you taste the sauce first before adding salt.

As for the pasta, this recipe suggests Spaghetti. But, of course, you can always utilize other types such as penne, linguine, fettucini, as well as macaroni. It all depends on what you like.

Yes, this pasta recipe is versatile. You are free to add more ingredients like spinach, mushrooms, zucchini, asparagus, peppers, and peas. You can even mix some cherry tomatoes, arugula, and basil. Or, if you are not a vegetarian, bacon, ham, grilled chicken breast, smoked salmon, prawns, and shrimp would be an excellent addition, too.
